Parsley balls

Parsley balls


3 or 4 large bunches of parsley
2 eggs

1 tbsp flower
1 garlic clove
black pepper

a pinch of sodium bicarbonate

some flour to roll in
olive or sunflower oil

Ingredients for the sauce:

1 carton of yogurt
2 garlic cloves
a handful of dill



Chop the whole of the pars­ley very fine­ly. Add the eg­gs, one ta­ble­spoon­ful of flour and the sea­son­ing. Us­ing your hand, mix ev­ery­thing well and leave the mix­ture for half an hour in the fridge. 

Scoop out from the mix­ture with a spoon, shape in­to a ball with your hand, roll it in the flour, re­move the ex­tra flour and fry in heat­ed oil on both sides for a few min­utes. Then leave the balls on kitchen pa­per to dry up.  In the same way, fry the rest of the balls.
